The festive period can be particularly carbon intensive. At Future Leap we wanted to keep our celebrations as green as possible. Cue our friends at Canteen – a vegetarian restaurant in Stokes Croft who value seasonal, local, and ethically farmed ingredients, and have a 25% carbon emissions reduction target within the next 5 years.
You may have seen their low-carbon Christmas menu, an astonishing 53% less carbon intensive than a traditional three-course, meat-based Christmas dinner, as calculated by our Future Leap Consultancy team.
The sharing feast featured dishes such as freshly made focaccia, wild mushroom stroganoff arancini, celeriac pastillas, as well as some traditional sides like crispy brussels sprouts and maple glazed parsnips.
